Ingredients (serves 4): 

5 eggs

80mlml of Magamila olive oil

3 medium potatoes

5 tbsp of parmesan

2 tbsp of breadcrumbs 

1 pinch of salt 

Preparation:

Firstly, we wan to prepare the potatoes. For this, you will need a frying pan and to cut the potatoes into medium chunks (not too thin). Then fry the potatoes until golden in olive oil. Once the potatoes are cooked through, take a medium-sized bowl and place the eggs, parmesan, breadcrumbs, and salt and whisk by hand. Turn on the potatoes and once the oil starts sizzling, pour the mixture into the pan. Once one side is cooked through, flip the omelette (you can do this using a large pan lid) and cook the other side. Now it is ready to be served. This dish will be best when served warm.
